Herbed Butterfly Chicken 

Rub a butterflied chicken with mixed herbs, lemon zest, olive oil, salt, and pepper. Roast at 200 degrees celsius for 45-50 minutes or until golden brown and cooked through. Leave to rest for 10 minutes before garnishing with fresh herbs.


Peach and Feta salad 

On a platter, arrange mixed green salad leaves, sliced peaches, thinly sliced red onion, and freshly chopped mint. Make a dressing by combining 1/4 cup extra virgin olive oil, 3 tbsp balsamic vinegar, 1tsp brown sugar, salt, and pepper. Sprinkle feta over the salad, then dress with the balsamic dressing.

Classic Roasted New Potatoes

Scatter new potatoes over a roasting tray, then drizzle with olive oil. Season with salt, pepper and garlic powder or dried mixed herbs, then roast at 180 degrees celsius for 3-40 minutes or until tender and golden.

Meringue Wreath

Arrange store-bought meringues in a wreath shape on a platter. Pipe whipped cream over the top of each meringue and in between the gaps, then drizzle with fresh passionfruit or passionfruit syrup and top with fresh raspberries and grated white chocolate or chocolate shards.
